1 tablespoon vegetable oil for frying
1 healthy cooking egg
14 fluid ounces milk
1 (1 ounce) envelope instant chili sauce
1 (1 ounce) package taco seasoning mix
4 ounces cooked white rice
Heat oil in a large soup or large saucepan over medium heat. Stir together the egg, milk and chili sauce, gradually whisking well. Bring to a boil, stirring constantly. Cook and stir for one minute and remove from heat. Stir in the rice. Return the skillet to medium-high heat and add the egg/sauce mixture. Drizzle over the rice while the chicken is cooking. Don't float the rice.
