I really enjoyed this recipe. I used a can of diced tomatoes with jalapenos. I subbed blue cheese for the blue, and used my black peanut oil (I got it from an Asian food company) instead of vegetable oil. I know people say peanut oil burns, but I didn't think so. I was worried that if I let it simmer too long, my tofu would turn really brown and absorb the oil. But it was perfect. So versatile and tasty.
