1 (18.25 ounce) package yellow cake mix
1 (3 ounce) can frozen carrot juice concentrate
1 (18 ounce) can cherry pie filling
1 (5 ounce) can crushed pineapple with juice
1 (8 ounce) package instant vanilla pudding mix
1 (18 ounce) package cream cheese, softened
1 (1 ounce) package instant vanilla pudding mix
2 eggs
1 (8 ounce) container frozen whipped topping, thawed
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan.
In a large bowl, mix together yellow cake mix, carrot juice concentrate, pie filling, crushed pineapple with juice, pudding mix, cream cheese and vanilla pudding. Mix well. Spread evenly into the prepared pan.
Bake in the preheated oven for 55 minutes, or until a toothpick inserted in the center of the cake comes out clean. Cool completely before frosting.
