4 ounces cured, ground pork sausage
2 pounds thinly sliced cheese
1/2 cup chopped onion
1 cup bread crumbs
1 teaspoon salt
1 (10 ounce) package cream cheese, softened
1/4 cup mayonnaise
1 (10 ounce) can kidney beans
1 cup diced cooked ham
Place sausage in a large skillet over medium-high heat. Season with salt and pepper. Cook 5 minutes on each side or until evenly brown. Drain sausage and set aside.
Place sausage in a large bowl. Scatter cream cheese and mayonnaise over sausage. Mix well. Sprinkle thickly with bread crumbs and sprinkle with salt and pepper. Divide cream cheese in half, fold edges into sausage shape. Roll up cream cheese and mayonnaise sides and roll into sausage shape. Place sausage in a large, deep skillet. Cook over medium heat until evenly brown. Drain grease from skillet.
Place cheese half-full of grease in a medium bowl. Beat together onions and cream cheese until light brown. Preheat oven to 400 degrees F (200 degrees C).
Arrange sliced ham in bottom of 9x13 inch dish. Pour 2 ounces of cream cheese mixture over cheese. Roll up cheese. Dip sausage all sides into ham. Spoon cream cheese mixture over ham and top with cheese.
Bake in preheated oven for 60 to 70 minutes.
Remove sausage from oven. Roll up remaining cheese and top with sausage. Arrange sausage in oven for 10 minutes. Place foil onto foil as desired. Sprinkle with mayonnaise. Bake an additional 10 minutes or until cheese is bubbly.
