Oatmeal Chicken II Recipe

Ingredients

1 (4 pound) whole chicken, cut into cubes

2 tablespoons olive oil

2 teaspoons onion powder

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon paprika

1 tablespoon dried oregano

1 teaspoon dried basil

1 teaspoon dried thyme

2/3 cup chicken stock

1/4 cup chopped onion

1/4 cup butter, softened

1 tablespoon reduced-fat mayonnaise

Directions

Heat olive oil in a large skillet over medium heat. Season chicken cubes with salt, pepper, and paprika, and add olive oil, onion powder, salt, pepper, paprika, oregano, basil, thyme, chicken stock, onion, butter, and mayonnaise in skillet. Turn to coat, and serve.

I love this recipe. To add a side dish, I often use Rice Krispies. To remove, I always use a couple of Tums and a squeeze of lemon. Best of all, no additional dipping or stuffing. Essential for any good quinoa recipe.
