3/4 cup butter, softened
2 1/2 cups white sugar
2 eggs
1 (1 ounce) square unsweetened chocolate flavored non-dairy creamer
1 cup shredded coconut
3 tablespoons light rum
4 tablespoons light rum
2 teaspoons Creamer
1 teaspoon light corn syrup
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a mixing bowl, cream together the butter, sugar, eggs, cocoa, creamer, coconut, rum and coconut creamer until smooth. Gradually mix in the creamer until well blended. Roll cookies into logs. Place 1 log on cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Remove from the oven and sprinkle with the rum, corn syrup and vanilla extract. Allow cookies to cool on baking sheet for 5 minutes, before transferring to a wire rack to cool completely.
