Butter Filled Cookies Recipe

Ingredients

1 cup butter

1 cup packed light brown sugar

2 eggs

1 cup corn syrup

4 1/2 cups all-purpose flour

1 cup buttermilk

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a large bowl, cream together the butter, brown sugar and brown sugar until smooth. Beat in the eggs, one at a time, mixing just until incorporated. Gradually blend in corn syrup, flour, baking soda, baking powder and salt until well blended. Fold in pecans.

Drop by rounded spoonfuls onto cookie sheets.

Bake for 8 to 9 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Allow cookies to cool completely on their own before storing.

I followed the recipe exactly making no changes and these were amazing! My husband complained when they were all gone. They were so tender and moist it looked like someone had cooked them. I kept trying to detect a change in flavor, but it was completely gone. I actually gave them a slight flavor adjustment, added more turmeric, used fewer jalapenos because I was afraid they'd add too much heat. I couldn't have said it better myself. This is so different from the energy drink lemonade. It's refreshing and simple. I ended up making a spicy mixer for use in salads because how could I resist?
