Peach Stuffed Muffin Recipe

Ingredients

8 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 eggs

1/3 cup butter, softened

1/2 teaspoon vanilla extract

1/2 cup chopped peaches

1 1/4 cups sliced fresh strawberries

1 cup chopped pecans

1/2 cup chopped pitted dates

1 teaspoon lemon zest

Directions

Preheat oven to 400 degrees F (200 degrees C).

Using a fork, remove the parchment paper from the muffin liner. Mix together flour, baking powder, baking soda, salt and eggs. Mix the butter, vanilla extract, pecans, fruit and strawberries these together, and add all at once. Fold in pecans. Serve already muffin or refrigerate for 1 hour or longer if you like your muffins more crispy.

Remove muffins from refrigerator and dust with lemon zest. Place on a cookie sheet.

Bake in preheated oven for 50 minutes.
