1 1/2 cups milk
1 cup heavy cream
1 1/2 cups white sugar
2 eggs
1/3 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon vegetable oil
1 teaspoon lemon juice
1 (31 ounce) can vanilla wafers
1 cup butter, chilled
1 teaspoon lemon zest
In a large bowl, combine milk, cream, sugar and eggs. Beat for 15 minutes, or until adding eggs. Spread over bottom of pie pan. Chill overnight.
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, beat cream cheese until foamy. Beat in oil and eggs. Gradually beat in lemon juice until light. Stir in vanilla until smooth. Pour over pie.
Bake in preheated oven for 1 hour, or until pie is set and gently puffed on top. Cool completely before cutting into squares.
