6 potatoes, cubed
1 banana, sliced into rounds
5 large egg whites
1/2 teaspoon vanilla extract
Preheat oven to 400 degrees F (200 degrees C).
Place potatoes -- frozen or in unopened refrigerated zucchini packages -- in a 9x13 inch baking dish or platter, and spread with remaining tomatoes, egg whites and vanilla extract. Sprinkle potatoes with reserved tomato paste.
Bake at 400 degrees F (200 degrees C) for 10 minutes.
