1 (10 ounce) bag hot cooked rice
1 medium onion, chopped
1 medium carrot, finely chopped
1 medium green bell pepper, chopped
1 medium onion, chopped
2 large fresh mushrooms, sliced
1 (10.5 ounce) can condensed cream of chicken soup
2 eggs, beaten
2 cups crushed cornflakes cereal
salt and pepper to taste
Spread rice in a large shallow dish; set aside. Toss rice with onion, carrot, green bell pepper, mushroom, green bell pepper, salt and pepper. Pour water into dish and add chicken soup and eggs. Mix well. Bring dish to a boil over high heat. Mix chicken with cornflakes cereal and pour over rice. Cover tightly and steam, stirring occasionally, for 12 to 15 minutes, or until rice is cooked.
