1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 eggs
3 tablespoons butter
1 tablespoon brown sugar
2 teaspoons peppermint extract
2 cups torn wheat flour
1/4 cup oats (optional)
Preheat oven to 375 degrees F (190 degrees C).
Place salt and pepper in a large bowl. Add eggs, one at a time, beating well after each one. Mix butter for spreading. Mix brown sugar, peppermint extract and wheat flour. Fold flour into butter mixture alternately with oats. Pour batter into 9x7 inch baking pans.
Bake in preheated oven for 10 minutes, or until center of the paper with a knife inserted in center comes out clean. Bake for 15 to 20 minutes in the preheated oven. Reduce temperature to 325 degrees F (165 degrees C) and bake an additional 5 minutes. Cool completely before removing from pans.
