1 cup white sugar
1 cup corn syrup
1 teaspoon grated lime zest
1 teaspoon lemon juice
1/3 cup cider vinegar
1 1/2 teaspoons distilled white vinegar
1/8 teaspoon salt
1 teaspoon white sugar for garnish
In a large bowl, mix sugar, corn syrup, lime zest, lemon juice and vinegar. Bring to a slow boil. Stir steadily until mixture is thickened. You may notice that the fruit displays more starch in the middle when you mix the corn syrup and vinegar.
Stir corn syrup mixture into vinegar mixture and flavor with 1/8 teaspoon sugar. Serve warm.
