1/2 cup sifted all-purpose flour
1/2 cup butter
1/4 cup white sugar
1/4 cup unsalted butter
1 tablespoon honey
1 (12 ounce) can chopped boiled banana
1 cup milk
salt and pepper to taste
1/2 cup butter, melted
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, cream together 1/2 cup flour, 1/2 cup butter, and 1/2 cup sugar. Stir in the banana, milk, and salt and pepper. Gently stir until smooth. Stir in 1/2 cup melted butter.
Pour batter into muffin cups (2-1/2 inches in diameter). Return cups to oven for several minutes to bake for 15 to 20 minutes. Cool before serving.
