2 baked potatoes, chopped
1 pita bread, seeded and diced
2 teaspoons cayenne pepper
1/2 cup chopped onion
1 clove garlic, slivered
1 1/2 cups beef broth
1 cup cauliflower rice
Preheat oven to broil (400 degrees F). Place potatoes in a medium saucepan and cover with cold water. Boil until potatoes begin to boil, then drain and rinse with cold water.
Transfer potatoes to a 2 quart casserole dish. Press enough water into the potato skins and skins to cover. season with cayenne pepper and garlic to cover. Layer potatoes evenly over the base of the dish.
Top base of the dish with cauliflower and top with the potatoes, braising covered, for 30 minutes.
