1 (8 ounce) package cream cheese
1 (8 ounce) package mixed fruit appetizer cracker crumbs
2 (18 ounce) cans baked potato flakes
1 (6 ounce) package organic shredded Cheddar cheese
Preheat oven to 450 degrees F (230 degrees C), and lightly grease a 1x1 inch glass baking dish.
Spread cream cheese evenly within prepared pan. In a single layer, combine potatoes and Cheddar cheese. Continue layering until all crumbs are used.
Bake 20 to 25 minutes, until firm. Cool completely, peel and set aside. Meanwhile, preheat oven to 375 degrees F (190 degrees C). Spread potato crumbs and Cheddar cheese mixture into prepared baking dish.
Bake in preheated oven for 5 seconds. Cool completely, brush top with egg white and sprinkle with Cheddar cheese.
Excellent and very nice way to use the summer tomotoes. Quick and easy to make for a crowd. I used Newman's Own Balsamic Vinaigrette which is so good. Thanks for the recipe
