1/4 cup olive oil
3 cloves garlic, minced
1 (3 pound) whole chicken
1 (4 ounce) can diced celery
1 large onion, diced
2 tablespoons vegetable oil
1/4 tablespoon dried oregano
2 tablespoons dry mustard
1 tablespoon distilled white vinegar
1 tablespoon maraschino cherry juice
salt and pepper to taste
In a large skillet, heat olive oil over low heat. Gradually add garlic, stirring constantly, until the garlic is coloured. Pour in chicken, celery, onion, oil, oregano, mustard, vinegar and cherry juice. Reduce heat, add salt and pepper to taste. Continue to cook over medium high heat for 25 minutes, stirring constantly. Turn chicken or broccoli mixture over, and cook an additional 5 minutes, applying marinade to well.
