2 tablespoons olive oil
1 (6 ounce) package orange flavored Jell-O
2 (3 ounce) cans sliced pineapple, drained
3 cups aluminum foil
Heat olive oil in a medium saucepan over medium heat. Stir in the gelatin and pineapple. Cook and stir until gelatin dissolves. Remove from heat.
In a large bowl, mix the orange flavored gelatin with pineapple, aluminum foil, and remaining pineapple. Pour into a 9x13 inch dish. Sprinkle with lemon zest. Cover and refrigerate for at least 1 hour.
