Peach Pie II Recipe

Ingredients

1/4 cup margarine

1 tablespoon white sugar

1 egg, beaten

1 cup miniature marshmallows, drained

1 (8 ounce) can sliced banana

1 (9 inch) prepared graham cracker crust

Directions

Prepare the crust by combining the margarine, sugar, egg and marshmallows. Line a 3 inch springform pan with foil. Wrap a generous match distance around the top of the foil to seal. Place the marshmallow mixture on the pan. Cover and refrigerate overnight.

Whisk together the brown sugar, banana and peach preserves. Place this mixture in a large heavy saucepan over medium heat. Stir constantly, stirring until mixture begins to thicken.

Remove foil and bake in preheated oven for 45 minutes. Reduce temperature to 350 degrees F (175 degrees C). Bake for 20 minutes, and turn crust over. Cover and allow to cool completely.
