1 tablespoon olive oil
1 pound lean ground beef
1 cup chopped onion
1 cup chopped celery
1 cup chopped broccoli
1 1/2 cups chicken broth
1/4 cup water
1/4 cup vegetable oil
Heat olive oil in a large pot over medium heat. Add beef; Brown on all sides. Stir in onion, celery, broccoli and chicken broth. Bring to a boil. Reduce heat, cover and reduce by 1/2 cup each half, blender or food processor, to a medium temperature. Heat to boiling. Reduce heat by 1/2 cup per 1/2 cup vegetable oil to medium heat. Stir in water, and bring to a boil. Boil for 5 minutes, stirring constantly. Reduce heat, cover and simmer 20 minutes. Stir in olive oil, chicken broth, water, vegetable oil, and malt vinegar. Heat, stirring constantly, until mixture is thickened.
