3 eggs
1/2 cup vegetable oil
2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup white sugar
2 tablespoons vegetable oil
1/4 teaspoon salt
1 teaspoon ground black pepper
1 cup buttermilk
1 teaspoon vanilla extract
1 cup raisins
1 cup chopped walnuts
1 cup sliced fresh strawberries
1 cup shredded Cheddar cheese
Place eggs in a bowl, and beat vigorously with electric mixer until foamy. Gradually add oil and baking powder, continuing to beat until mixture resembles coarse granulated sugar. Mix sugar, vegetable oil, and salt into eggs, beating well. Mix remaining ingredients into egg mixture. Fold in raisins, and sprinkle over whole pancake.
Preheat oven to 350 degrees F (175 degrees C). Spread 1 tablespoon of mixture over each pancake.
Bake in preheated oven for 20 minutes, or until brownies spring back when lightly touched in center of pan. Cool 10 minutes in pan, then invert onto serving platter. Cover and refrigerate overnight.
