1/4 cup butter
1 cup packed light brown sugar
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups butter, softened
1/2 cup packed light brown sugar
1/2 cup white sugar
1 teaspoon cinnamon
2 cups fresh fruit, peeled and sliced
1 cup chopped walnuts
1 cup chopped pecans
Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x9 inch pan.
In a large bowl, cream together butter, brown sugar and white sugar until smooth. Beat in egg, vanilla and flour; gradually blend into the creamed mixture. Mix in 1/2 cup flour and baking powder; stir into the creamed mixture. Mix in 2 cups fruit, pecans and pecans. Spread the remaining mixture on the bottom of the prepared pan. Place a layer of crust on top of the fruit mixture.
Bake in preheated oven for 45 minutes, or until toothpick inserted in center comes out clean. Cool completely before cutting into squares.
I made these bars exactly as directed and they were delicious. I would have liked them more though. The cinnamon in the frosting was a bit overpowering for my taste. Would have been better to coat the bars with chocolate chips or a chocolate frosting. The recipes in this article are excellent. I won't be making these again.
worked too thin, ended up mixing 2/3 of a banana with 1/3 of a sweet/blue cheese and peanut butter recipe
I made these bars earlier this month and they were delicious. I bakedred them and they burned and I put the zucchini in the boiling water for a few minutes to kill any seeds and to thicken the dough. I got 14 half-pint jars with no visible cracks or small drops of water. I also bakedred them and added 1-1/2 cups of sour cream. They still have not reached their full baking power. I will report back with modifications.
