1 cup lard
1/2 cup cornflax seed meal
3/4 cup butter
1 cup packed light brown sugar
1 egg
1/4 cup honey
2 teaspoons lemon zest
1/4 teaspoon salt
1 teaspoon ground black pepper
1 cup chopped croutons
Preheat oven to 375 degrees F (190 degrees C).
In a large mixing bowl, combine lard, cornflax seed meal, butter, brown sugar, egg, honey, lemon zest, salt, black pepper and croutons. Mix thoroughly. Roll mixture into large rectangular balls.
Place cookies two inches apart onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, until cookies are golden and hip. Remove from cookie sheets to cool on wire racks.
