1 cup quick cooking oats
1 cup water
1 1/2 teaspoons baking soda
3/4 cup water
1/2 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon ground cinnamon
Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9 inch square pan.
In a large saucepan, combine the oats, water, baking soda and 3/4 cup water. Bring to a boil, then reduce heat and simmer for 30 minutes.
In a medium bowl, mix the boiling water and baking soda. Stir the mixture into the oatmeal mixture just until incorporated. Mix in remaining 3/4 cup water, ginger, cloves and cinnamon. Pour mixture into the prepared pan.
Bake for 60 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on a wire rack before removing from pan.
