2 cups shortening
2 cups confectioners' sugar
3 cups all-purpose flour
2/3 cup unsalted butter
4 eggs
1 tablespoon vanilla extract
1/2 cup semisweet chocolate chips
1/2 cup raisins
1/2 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream the shortening with the 1 cup of sugar and the flour. Stir in the 3 cups chocolate mixture. Oh! and sprinkle the chocolate chips around the biscuits just until well coated. Drop by heaping teaspoonfuls onto the prepared cookie sheets, then press a few down to .25 inch thick.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. You may want to keep the chocolate sauce a little liquid. When dried, store in an airtight container.
