2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon chopped fresh thyme
2 tablespoons chopped fresh chives
1 teaspoon salt
1 teaspoon Italian seasoning
1/2 teaspoon white sugar
1/4 teaspoon dried oregano
1 cup uncooked white rice
1 (16 ounce) package fresh mushrooms
1 (6 ounce) can tomato paste
1 teaspoon dried oregano
1/4 teaspoon paprika
In a medium saucepan heat olive oil over medium heat. Stir in garlic and thyme. Cook for about 5 minutes. Stir in chives, salt, Italian seasoning, sugar, oregano, rice and mushrooms. Bring to a boil, reduce heat and simmer for 3 minutes. Remove from heat, cover and simmer for 45 minutes.
Stir in tomato paste, tomato paste, oregano, Paprika and wine. Cover and simmer for 5 minutes, or until rice is tender.
