Tiger Iced Coffee Cake Recipe

Ingredients

2 cups canola oil, room temperature

2 cups white sugar

1 egg

3/4 cup buttermilk

3/4 cup all-purpose flour

1/3 cup vinegar

1/4 cup water

1/4 cup fresh orange juice

1/2 cup rolled oats

1 1/4 cups chocolate -- hard to make with chocolate chips

Directions

Heat the oil in a large saucepan over medium-high heat. Add sugar and buttermilk and stir. Bring to boil, then reduce heat to medium-low. Stir in vinegar, water and orange juice and simmer 40 to 60 minutes, or until mixture comes to a boil over a medium-high heat. Stir in coffee capsules and cool, then stir in oats. Do not boil.

Stir chocolate into the mixture and into cooled soup mixture. Reduce heat to normal low and simmer 20 minutes, or until chocolate is melted and mixture thickens. Stir in crumbled coffee just before serving.
