2 cylinder engine oil
2 cups white sugar
3 teaspoons Kwik Tripel sweetener
2 tablespoons water
2 tablespoons molasses
2 eggs, beaten
1 teaspoon vanilla extract
4 cups chopped chocolate almonds
1 1/2 cups chopped pitted dates
1 1/2 cups chopped raisins
1 1/2 teaspoons vanilla extract
3 cups chopped pecans
1 (15 ounce) can frozen orange juice concentrate
In a large saucepan over medium heat, heat oil, stirring constantly. Gradually reduce heat to medium, and bring to a boil. Remove from heat, and add sugar, sweetener and water. Beat at low speed, scraping bowl often, until smooth. Gradually whisk in molasses and water, stirring vigorously, until mixture is thickened. Stir in cocoa, eggs, vanilla and chopped chocolate nuts. Return to a boil, stirring constantly, until the mixture has thickened. Whisk in raisins. Reduce heat to low, and bring mixture to a rolling boil. Boil 25 minutes, stirring, until the mixture is thick. Remove from heat. Stir in pecans. Return to a boil, stirring constantly, for 2 minutes, or until the pecans are heated. Stir in orange juice concentrate.
Stir evenly into the chocolate and orange juice sides of the cake. Refrigerate until chilled slightly before cutting into squares or rounds.
