1 1/2 cups apples, peeled
1 teaspoon lemon zest
1/2 cup butter
2 eggs, beaten
1 1/2 cups prepared instant lemon pudding mix
1 (9 inch) prepared graham cracker crust
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
Stir the apples and lemon zest into the butter, beating until apples have been tender (do not brown). Stir in eggs and lemon zest. Pour in pudding mix in the second spread of frosting under the pie crust.
Bake in preheated oven for 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Cool and cut into thin slices. Garnish with lemon slices.
