1 1/2 cups applesauce
1 cup margarine, softened
3 1/2 teaspoons packed brown sugar
4 eggs
2 cups white sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 (18 ounce) can crushed pineapple
1 cup sliced almonds
1 cup butter
1 1/4 cup nonfat milk
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
In a large bowl, mix applesauce, margarine, 3 tablespoons brown sugar, eggs, 1 cup sugar, 1 teaspoon vanilla extract and cinnamon. Mix well. Stir the applesauce mixture into the eggs mixture until just blended. Fold the flour mixture into the batter until just incorporated. Pour batter into prepared pans.
Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of each pan comes out clean. Cool on the baking sheet for about 10 minutes, then remove from pans. Cool completely before cutting into 1 inch squares. Return them to the prepared pans for extra frosting.
