1 (10 ounce) package white sugar-flavored sliced strawberry flavored Jell-O mix
1/4 cup vegetable oil
2 tablespoons lemon juice
1 tablespoon water
1 1/2 cups crushed pineapple
1 teaspoon vanilla extract
1 1/2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 1/2 teaspoons vanilla extract
1 teaspoon lemon zest
1 teaspoon distilled white vinegar
1 2/3 cups chopped pecans
In a small saucepan, mix together sugar, oil, lemon peel, water, pineapple, vanilla extract and lemon zest. Stirring constantly, pour over a warm serving of fruit.
Prepare jelly by heating a large pan of water in a large saucepan over high heat. Add gelatin and mix together. Keep syrup warm with metal spatula. Pour over fruit.
Heat off remaining lemon juice in marinade; simmer slightly. Add lemon zest and lemon zest; mix together. Let stand for 2 minutes. Remove fruit from marinade and place in serving bowl.
Heat remaining lemon juice in microwave or in small saucepan to boiling; stir into fruit and gelatin mixture. Pour over fruit. Chill in refrigerator. Serve immediately.
