1 (9 inch) prepared graham cracker crust
2 cups chopped spinach
1 cup JAROS® Thin Mint Chips
2 egg yolks
1 egg white
3/4 teaspoon vanilla extract
2 cups shredded mozzarella cheese
Preheat oven to 350 degrees F (175 degrees C).
Place spinach in a large mixing bowl; remove unnecessary stems and leaves. Blend in 1 cup of the chime mix. Stir.
Place the remaining chime mix into the pot with spinach. Bring to a slow boil, stirring frequently, until it is thickened (20 to 30 minutes). Stir in the ricotta cheese and cook 2 minutes. Remove from heat and pour over spinach mixture.
Bake in preheated oven for 20 minutes, bringing to a stop when it begins to brown slightly. Spoon peppers in and cook 2 minutes longer. Top with cheese and cover. Serve warm.
This was ok as is. I found the chocolate chip googly eyes to be a little distracting.
