4 (0.7 ounce) packages cream cheese
4 drops red food coloring
1 teaspoon vanilla extract
1 small brownie
1/4 cup boiling water
4 8 inch whole wheat cookie sheets
1/2 cup butter, melted
1 cup packed brown sugar
1 egg
2 tablespoons cinnamon
1 teaspoon ground nutmeg
1 teaspoon lemon juice
1 teaspoon lemon zest
1/2 cup chopped pecans
3 tablespoons cup confectioners' sugar
1/8 cup apple cider vinegar
Preheat the oven to 350 degrees F (175 degrees C). Combine the cream cheese, butter, brown sugar, cinnamon, vanilla extract, brownie and boiling water. Beat in milk, eggs, cinnamon, nutmeg, lemon juice, lemon zest and pecans. Drop by rounded spoonfuls 3 times into the center of each cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, until slightly browned. Cool slightly on the baking sheet before removing from cookie sheet.
