1 (11 ounce) package peach flavored Jell-O mix
1 (3 ounce) package instant chocolate pudding mix
1 cup boiling water
2 eggs
1/4 cup vegetable oil
3 tablespoons white sugar
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
2 teaspoons lemon zest
1 cup shredded coconut
1 cup shredded Swiss cheese
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped peaches
1/2 cup lemon juice (optional)
In a medium bowl, mix peach flavored gelatin and pudding mix. Stir closely and make sure there are no lumps. Beat in boiling water until gelatin is dissolved. Pour into a large glass or metal bowl and chill overnight.
Shape into a 2 inch round shape. Place 1 cup peach flavored gelatin into one end of the round and 1 cup pudding mix into the other end. Place cake onto a large serving platter. Drizzle with lemon juice, if desired. Place cake in freezer to chill overnight.
Prepare the whipped cream by boiling water in a large saucepan. Beat together the butter, sugar, vanilla, lemon extract and lemon zest. Stir in coconut and sprinkle the pudding mixture over the fruit. Serve warm or chilled.
