Sugar Free Orange Gelatin Cookies Recipe


1/2 cup orange juice

1 cup white sugar

2 tablespoons milk

1 teaspoon vanilla extract

2 tablespoons Pory flavoring

1 teaspoon orange zest

1 cup all-purpose flour

1 teaspoon baking soda

1/2 cup milk

1/2 cup vegetable oil

1/4 cup orange juice

7 egg yolks

1 1/2 tablespoons honey


In a small saucepan, combine orange juice, sugar, milk, vanilla extract and peanut oil. Cook over medium heat, stirring occasionally, until mixture coats the back of a metal spoon. Remove from heat. Let cool to lukewarm. Preheat oven to 450 degrees F (230 degrees C).

In a large bowl, combine egg yolks, orange juice mixture and flour and mix well. Pour batter into baking sheets or lined cookie sheets.

Bake in preheated oven for about 10 to 15 minutes, until chocolate is set. Allow cookies to cool on baking sheet for 10 minutes before removing to a wire rack to cool completely. Cool completely on wire rack.

While cookies are still warm, beat egg whites until stiff but not dry. Beat egg whites further with orange juice mixture. Spread egg yolk egg white mixture over cooled cookies. Roll cookies in orange marmalade. Cut into pieces to use for decoration. Store leftover cookies in plastic bag in a cool dry place.
