1 1/2 cups rolled oats
1 1/2 cups all-purpose flour
1 cup packed brown sugar
1 cup white sugar
3 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 cups butter or margarine, divided
1 teaspoon vanilla extract
1 1/2 cups milk
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
Mix oats, flour, brown sugar, white sugar, eggs, baking soda, baking powder, salt, cinnamon, vanilla and 2 cups milk together in 2-quart or individual cup measuring cups. Spoon batter into prepared paper liners about 1/4 inch thick.
Bake in preheated oven for 30 minutes. Cool completely in the pan. Remove paper liners.
