Easy Rye Oat Pancakes Recipe

Ingredients

1/4 cup butter

1/4 cup milk

1 cup white sugar

1 egg

1 egg yolk

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 cup rolled oats

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9x5 inch loaf pans.

In a large bowl, cream together the butter, milk and sugar until light and fluffy. Beat in the egg, one at a time, but do not over mix. Stir the flour, baking soda, salt, cinnamon and nutmeg, then beat in the oats until well blended. Pour batter into prepared pans.

Bake in the preheated oven for 1 hour. Reduce temperature to 325 degrees F (165 degrees C), and continue baking for 45 minutes.

Remove from oven, and let cool. Cool completely, cut into 1 inch squares, then cut into cubes. Use to make fondue or tea cake.
