3 scoops vanilla ice cream
1 1/3 cups orange juice
1/3 cup lemon juice
1 teaspoon lemon zest
1/4 teaspoon cinnamon flavorings
1 1/4 teaspoons ground ginger
5 apples - peeled, cored and chopped
2 tablespoons vegetable oil
1/2 cup milk
4 tablespoons white sugar
In a medium saucepan, combine ice cream, orange juice, lemon juice, lemon zest, cinnamon flavorings, ginger, apples and oil. Bring mixture to a boil and cook, stirring occasionally, for about 3 minutes. Cool slightly.
Whisk in the milk, sugar and lemon zest. Cook over medium heat, stirring constantly, until mixture is thickened. Stir until sugar dissolves and mixture begins to thicken.
Drop 1 tablespoon of lemon mixture onto the bottom of a double boiler or in a small bowl; stir gently to coat and pour mixture into the bottom of a 9x13 inch baking dish. Layer with fruit in bottom and pastry on top.
Bake at 325 degrees F (165 degrees C) for 20 minutes. Cool completely, drain and store in refrigerator.
Just made these ... just seared them on a baking sheet (stickied this under wraps) ... They apparently stuck to virgin coconut better than my second-gen's that made by-the-pound.
