4 eggs, beaten
3/4 cup vegetable oil
1 (15 ounce) can Italian-style stewed tomatoes
1/2 cup grated Romano cheese
1/2 teaspoon hot salt
1/2 cup Italian-style seasonings
1 cup frozen pasta, thawed
1/2 cup olive oil
Preheat oven to 350 degrees F (175 degrees C).
In a saucepan, combine eggs, oil, tomatoes, cheese and salt and heat until cheese is melted and mixture is smooth. Remove from heat, and stir in tomatoes, Romano and hot salt and seasoning.
In a 2 quart saucepan, combine pasta, oil, and tomato mixture. Bring to a boil. Reduce heat to low, and simmer, uncovered, until nearly done (about 15 minutes).
Meanwhile, heat olive oil in a skillet over medium heat. Place 1/2 cup of filling over pasta, and pour over spinach and mushrooms.
Bake in preheated oven for 15 to 20 minutes, or until sauce is bubbly and slightly cooked.
I agree, it was a bit of a letdown coming out of the oven - but then again, this is a new recipe. I had never used butter before, and I was worried about the texture of the cheese, but it turned out OK. I did cut the onions quite small, just because I was having trouble with the texture of the onions, and I also used butter instead of olive oil. OK, so it is not as quick and easy as it looks. I did halve the recipe and was worried about the veggies, but to each his/her own! I definitely will make it again, as I did not (yet) turn my mushrooms green, and I think that would have been even better. Sorry, I did not like the end result, I made it anyway. Hope this helps:)
I added more chicken just because I had more things I wanted to cook. I always recommend adding more liquid to soups and I thought ham would be a great addition to this recipe. It turned out fantastic. I always do a little extra seasoning when cooking soups. I did this in an oven at 350 for 15 minutes. It really did taste like homemade pasta.
Truly one of the best dishes I have ever made. The taste from the mushrooms to the shrimp is incredible. My husband loved it and his family wanted nothing more than to stay home and eat it (and I did eat it all up!). Five stars all the way.
