1 (3 ounce) package strawberry flavored Jell-O
2 (4 ounce) cans crushed pineapple soda
1 cup boiling water
1 (5 ounce) can sweetened pineapple juice
1 (12 ounce) package cream cheese, softened
1 (7 ounce) can evaporated milk
2 (8 ounce) packages cream cheese, softened
2 cups chocolate syrup
1 cup crushed pineapple
1 cup chopped pecans
In a medium saucepan, mix together Jell-O, pineapple soda, water and pineapple juice. Bring mixture to a boil. Cook for 1 minute and remove from heat; stir in pineapple; cool.
Brush gelatin over bottom of glass serving dish. Pour lime juice over gelatin, stirring slightly. Strain gelatin mixture through a sieve into a large bowl.
Fold whipped cream and whipped cream cheese into gelatin mixture. Stir to spread gelatin mix on cake.
Spread pecans on to jelly layer. Beat cream cheese and evaporated milk until blended to form an unyolk layer. Cut into 1/2 inch squares. Place jelly layer over cream cheese and pineapple, spreading evenly. Garnish cake with pineapple fruit slices.
