2 tablespoons butter
1 (8 ounce) package cream cheese, softened
1 (3 ounce) can whole kernel corn
2 eggs
1 cup shredded mozzarella cheese
1 cup shredded Cheddar cheese
1/4 cup chopped onion
6 tablespoons chopped green bell pepper
Preheat oven to 350 degrees F (175 degrees C). Lightly butter an 8x8 inch baking dish.
Crush cream cheese with 2 tablespoons butter and place in microwave oven 12 minutes, or until melted; stir after 60 seconds.
Beat cream cheese in a medium bowl until slightly stiff. Mix in corn, eggs, mozzarella cheese, Cheddar cheese, chopped onion and green pepper. Spread mixture evenly over pie. Spread remaining cream cheese mixture on top; roll and chill overnight.
Bake in preheated oven 40 minutes, or until cheese is firm and crust is golden brown and bubbly on bottom.
