5 eggs
1 teaspoon lemon zest
1 teaspoon vanilla extract
1 1/2 cups applesauce
1 cup white sugar
1/2 cup lemon juice
1 cup margarine
2 teaspoons lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch pie pans.
Sift together the flour, baking powder and salt. Set aside.
In a large bowl, beat eggs, lemon zest and vanilla together until light and fluffy. Beat in sugar, lemon juice and margarine. Stir over a medium bowl until batter is light and fluffy. Fold egg mixture into brown sugar mixture using a wooden spoon until just moistened, but not sticky. Spread evenly into prepared pans.
Bake in preheated oven for 40 minutes, or until lightly browned. Cool slightly before cutting into bars.
