1/2 cup butter, softened
1 cup brown sugar
1 1/2 cups white sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
2 teaspoons vanilla extract
6 large marshmallows
1 cup brown sugar
1/2 cup margarine
1 (12 ounce) package cornflake candies, thawed
1 cup flaked coconut
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar, white sugar and egg until smooth. Beat in the vanilla. Combine the marshmallows and brown sugar; stir into the creamed mixture. Mix in the margarine and cornflake candies.
Drop marshmallow mixture into cookie sheets. Place second cookie sheet on cookie sheet. Place third cookie sheet on cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Cool on baking sheet for a few minutes before removing to wire racks to cool completely.
