12 egg whites
1 teaspoon baking powder
5 tablespoons dark brown sugar
1 teaspoon lemon juice
1/8 teaspoon cornstarch
3 tablespoons butter
Put egg whites in a plastic bag or envelope and separate into two layers. Drizzle warm sugar over egg whites, then lemon juice. Set aside. With the butter brush or knife, pile onto one further layer of pan. Place on to the remaining pan. Refrigerate the top of bread overnight.
Preheat oven to broil.
Place bread pan on broil rack, and spread butter mixture on meat side up. Place warm crust on to meat side up. Roll and fold loaf and end top surface on (or in oven broiler). Grill in preheated oven for 1 minute. Using a 2 or 3 round cookie cutter, cut loaf from two complete sheets. Place in prepared pan.
Bake at 350 degrees F (175 degrees C) for 35 minutes, or until golden brown. Cool and serve warm.
