Coconut Cream Cake Recipe

Ingredients

1 cup vegetable oil

1 cup white sugar

1/2 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon vanilla extract

1 teaspoon almond extract

1 cup chopped ripe bananas

1 cup chopped pecans

1 cup flaked coconut

1 cup pecans, pitted and sliced

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 10 inch round pans.

In a saucepan, heat oil over medium heat. Stir in sugar, then remove from heat. Mix in flour, baking soda, vanilla extract and almond extract, and set aside.

While remaining sugar is in a bowl, combine banana, pecans and coconut. Beat well. Remove from heat and pour mixture into prepared pans.

Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on wire rack, removing remains of cake when cool. Chill until serving time.

I've been leaving out the mushrooms because I didn't have any. I was planning on using wonton wrappers, but decided against it because I didn't think they were necessary. I thought they looked cute, so assumed I'd leave them out--occasionally I'll make this and I'll let you know what you think!

For what part Timothy? Didn't group properly, likely because many people skip the honey in the recipe. Took about 30 minutes to whip vs like 20 minutes for chopped apples.
