Corn and Chicken Recipe

Ingredients

1 tablespoon vegetable oil

1 large onion, cut into 1/2 inch slices

1 cup water

1 teaspoon dried minced onion

1 cup chicken broth

8 whole chicken legs, cut into pieces

1/2 cup water

1 cup water

1 teaspoon salt

1 (8 ounce) package cornflakes cereal

1 cup sliced fresh mushrooms

1 teaspoon ground black pepper

Directions

Heat 2 tablespoons of oil in a large skillet or frying pan over medium-high heat. Saute onion slices for about 5 minutes, stirring occasionally. Add water, then reduce heat to medium-low. Stir in chicken broth, then stir in salt, chicken and water. Bring to a boil, then reduce heat to medium-low. Cover, heat for about 5 minutes.

Stir cornflakes cereal into chicken mixture, then stir in mushroom, pepper and corn. Remove from heat and stir cornflakes mixture into chicken mixture.

Beat egg whites into chicken mixture before adding chicken mixture.

really nice along with the bread pudding. i did add a pinch of nutmeg but not enough to measure. also added a can of tomato sauce (250 ml), doubled the white sugar, threw in a couple of tbsps of McCormick's Chipotle Chile Pepper powder and threw in a lil parsley which to me was not enough. i also doubled the orange zest and used half of a large orange. pretty good. i used a large fresh pear as well. thanks for a good recipe.

This was a fantastic dish, my husband loved it and 3 year old me didn't care for pita bread (okay, I did) so this was the recipe I went with. pita breads are summer cookouts food, bring it along to the house and take part. I can't wait to finally make it winters day!
