Peach Jelly Roll Cookies Recipe

Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1 teaspoon lemon juice

2 eggs

1/2 cup chopped peaches

2 tablespoons orange juice

1 cup lemon juice

1 egg

2 tablespoons white sugar

1 cup lemon juice

1/4 cup lemon zest

2 teaspoons lemon zest

1/2 teaspoon vanilla extract

1 (9 inch) prepared chocolate cookie sheet

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

Mix together the flour, baking soda, lemon juice, eggs, peaches, orange juice and lemon zest. Stir in the lemon juice and lemon zest to form a smooth paste. Press dough into the prepared cookie sheet.

Bake in preheated oven for 10 to 12 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

In a large bowl, cream together the brown sugar, lemon juice and lemon zest. Beat in the egg, sugar, lemon juice, lemon zest and vanilla. Mix in the lemon zest and lemon zest. Stir in the peaches and orange juice. Beat in the peaches and orange juice alternately, then the lemon zest and lemon zest. Drop cookie by heaping tablespoons onto ungreased cookie sheets.

Bake for 8 to 10 minutes in preheated oven, or until golden brown. Cool cookies on baking sheet for 5 minutes to reach desired crispness. Allow cookies to cool completely on baking sheet before removing to wire racks to cool completely.
