3 1/2 pounds pork roast
2 tablespoons garlic powder
5 tablespoons lime juice
1 tablespoon soy sauce
1 tablespoon beef bouillon granules
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
Place pork roast in a 9x13 inch baking dish. Sprinkle with garlic powder, lime juice and soy sauce. Sprinkle with beef bouillon granules and parsley. Place in the dish, and sprinkle with basil and oregano. Drizzle with remaining garlic powder and soy sauce. Return pork to the pan. Cover, and refrigerate overnight.
While pork is refrigerating, heat the oven. To do this, in a medium, heavy saucepan, combine pork, water, lemon juice, olive oil, garlic powder, lime juice, soy sauce, beef bouillon and dried parsley. Cover, and bring to a boil. Boil, stirring occasionally, for about 15 minutes.
Remove pork from refrigerator, and place on a baking sheet. To make meat filling, stir together the beef filling, parsley, basil, oregano, salt and pepper in a small bowl.
Preheat oven to 350 degrees F (175 degrees C). Sprinkle pork with this filling before baking.
Bake in preheated oven until meat is tender, about 20 minutes. Cool before removing from pan.
This is a quick, easy and filling recipe! I prep the pork loin before I put it in the hubby thought it was going to be a bit dry. It turned out fantastic! I added garlic and used chicken broth instead of water. It was very flavorful and moist - the only thing I did differently was add a bit more grass. Once again, this is a keeper!
