1 large avocado
2 (10 ounce) packages frozen mixed vegetables
1 (16 ounce) package white brie cheese, diced
1 cup shredded Cheddar cheese
Place avocado in a large bowl. Mix mixed vegetables with water in a medium saucepan. Bring to a boil over high heat, stirring constantly. Boil for 2 to 3 minutes, or until heated through. Drain, cool and refrigerate.
Dredge white brie cheese in mashed avocado and slice into 1/4 inch slices. Serve with avocado and cheese.
really good but with a few adjustments, it's really good. i addedginnionic acid, but not enough, and i used tomato sauce. This is so yummy, and so easy! casseroles are so versatile!
