1/2 cup butter
1 1/2 cups white sugar
2 eggs
2 1/2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon apple pie spice
1/2 teaspoon cinnamon salt
1 (16 ounce) can crushed pineapple with juice
1/2 cup brown sugar for garnish
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.
In a large mixing bowl, cream butter, sugar and eggs. Beat for 2 minutes. Beat in the vanilla extract, flour, baking soda, salt, cinnamon and apple pie spice. Mix well. Do not over mix. Spread half of mixture into each pan.
In a medium bowl, mix cooked flour with brown sugar and remaining 2/3 cup dry mix seasoning. Gently fold into butter mixture.
Bake in preheated oven for 1 hour, or until a toothpick inserted into center of cake comes out clean. Cool and frost with brown sugar frosting. Garnish with sliced pineapple or pineapple with juice.
